100% Grenache. Certified organic grapes from two co-op wineries in the Languedoc-Rousillon - one in the Gard and the other from Hérault.

Grapes are harvested at night to preserve freshness. Direct press for a slightly extended time to allow for some maceration and color extraction. The wine is then racked off the lees and protected by sulfur (within the limits of organic certification). All done in concrete and stainless-steel tanks.

Licence IV is the permit in France allowing cafes, restaurants, hotels, and nightclubs to serve alcohol. The official enameled placards can be found bolted to the walls of these establishments throughout France.
