This sparkling co-ferment is Rose Hill Farm’s take on plum jerkum, a centuries-old English plum wine. The farm, a family orchard in Red Hook, New York, traces its history back to 1798 and today focuses on low-intervention fermentation of its own fruit.

It is made entirely from estate-grown fruit: plums, cherries, and apricots, carbonically macerated and co-fermented with apple cider. Bottled méthode ancestrale, it is raw, unfined, and unfiltered, with a natural, lively sparkle.

Expect aromatic plum on the nose, followed by a tart, juicy mix of stone fruit and apple and a cherry-tinged finish. Chill well before opening and pour into a wine glass. It’s a playful, easy-drinking introduction to the farm’s orchard co-ferments.
