Domaine Rossignol-Fevrier Volnay Vieilles Vignes 2021
Domaine Rossignol-Fevrier has been estate-bottling wines since 1920. Today Frederic Rossignol represents the 5th generation working the family vineyards and has taken the Domaine to a whole new level. He made the change to biodynamic farming ion 2012 on all 7.5 hectares of vines spread across Volnay, Pommard, Beaune, and Meursault. Not only is Frederic passionate about biodynamic farming, he also believes in the beauty of his older vines with all vines less than 45 years old being declassified to his Bourgogne Rouge.
Sourced from old vines (minimum 45 years old) across multiple plots. Vinification: pneumatic pressing (60% whole bunches). 15 months in oak (10% in new and 90% from 1 to 3 wines)
Bright strawberry, cherry, brambly red fruit, subtle forest floor, and mineral notes with an earthy or smoky undertone. Pairs well with duck, goose, and game birds
