Metamorphika Costador Chenin Blanc

From 62 year-old Chenin Blanc vines, it undergoes an extended maceration, with the grape skins soaking for 7 days prior to fermentation in clay amphora for 6 weeks. The wine then ages for 6 months in used oak barrels on its lees, developing a complex array of flavors and aromas. Notes of melon, citrus, apple pie, cinnamon, yeast, tea leaf, and dried herbs mingle with grainy tannins that lend an appealing texture. This distinctive Chenin would pair beautifully with a creamy porcini risotto.
