Sylvain Cathiard Hautes-Cotes de Nuits Rouge 2023

This Hautes-Cotes de Nuits comes from the "Aux Chaumes" vineyard, which sits next to their 'Les Dames Hugettes" plot. Situated above Nuit ST. Georges, the hillside is mostly limestone with some clay and stone. Vinified with 100% de-stemmed grapes, the wine is cold macerated for 10 days. It's then spontaneously fermented over 10-30 days, after which it spends 15-18 months in barrel. 20% of the barrels are new oak in this vintage. Unfined and unfiltered, this wine gets a mild sulfur addition after a short malolactic period.
