The "nun wine"! The Sisters of the Cistercian order in Lazio have been growing grapes on the monastery grounds since the 1990s, but their wines became even more special when winemaker Paolo Bea started advising them in the early 2000s. The wines have been naturally made with organic grapes, indigenous yeasts, no fining or filtering, a truly holistic experience!
