He planted the first vines three years later, and in 2011 converted the entire estate to certified Demeter biodynamic farming. Today, alongside winemaker Sebastian Nasello, Le Ripi has grown into a living agricultural ecosystem of roughly 60 hectares spanning forest, vineyard, olive grove, orchard, beehives and gardens — a place where Sangiovese vines share the land with wild nature rather than standing apart from it. Cappuccetto Rosa sits alongside the estate's more serious Brunello bottlings as one of its everyday wines: low-intervention, low-sulfur, and made with the same philosophical rigor as the rest of the range.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eMade entirely from hand-harvested Sangiovese picked early to preserve acidity and energy, this rosato is built more like a short-skin-contact red than a conventional rosé, spending roughly a night on the skins before aging some eleven months between steel and cement. The result is a medium, bright raspberry-red wine with a nose of wild strawberry, redcurrant and delicate pomegranate, layered with Mediterranean spring flowers, a whisper of Tuscan herb and a cool mineral edge.
