Oracle Cellars Callisto Zinfandel 2020

Estate grown fruit from sustainably farmed Bliss Ranch & Feliz Ranch in Mendocino. Hand harvest. Partially destemmed and allowed to soak for 72 hours. Fermentation takes place in temperature controlled, stainless steel tanks. Pressed to tank and allowed to settle. The wine is then racked off into a mix of French & American oak (35% new) and aged for 18 months. Lightly fined and gently filtered.
